Recommended Cooking: Thaw overnight in the refrigerator. Important: remove from the plastic or vacuum seal bag before thawing — this allows the meat to breathe and gives you a much better result.
Grill: Season generously with salt, pepper, and your favorite spices. Grill over medium-high heat 4-5 minutes per side until internal temperature reaches 145°F. Rest 3 minutes before serving.
Pan Sear: Heat oil or butter in a skillet over medium-high heat. Sear 3-4 minutes per side until golden and cooked through to 145°F. Finish with a pat of butter and fresh thyme.
Oven Bake: Preheat to 400°F. Season well and place on a greased baking sheet. Bake 20-25 minutes until internal temperature reaches 145°F. Rest before serving.
