Recommended Cooking: Thaw overnight in the refrigerator. Important: remove from the plastic or vacuum seal bag before thawing — this allows the meat to breathe and gives you a much better result. Pat dry and season generously. Sear skin-side down in an oven-safe skillet over high heat 4-5 minutes until deep golden brown, then finish in a 400°F oven for 25-30 minutes. Target internal temp: 165°F. Rest 5-7 minutes before serving.
