Recommended Cooking: Thaw overnight in the refrigerator. Important: remove from the plastic or vacuum seal bag before thawing — this allows the meat to breathe and gives you a much better result. Reverse sear for best results — oven at 250°F to 120°F internal, then sear on screaming hot cast iron or grill 1-2 minutes per side. Rest 10 minutes. Target 130°F for medium-rare. Season generously with coarse salt and pepper only — let the Wagyu speak.
